Skewer your fruit and set aside.<br \/>\n2. In a small saucepan, heat up your sugar, water, and cocoa powder over high heat. Boil until a thermometer reaches 300\u00b0F (no less). DO NOT STIR. Once it gets to 300\u00b0F, remove from heat immediately, and start dipping and rotating the skewers in the sugar mixture.<br \/>\n3. Best practice is to immediately plunge your coated fruit into ice cold water.
